From the noble grape variety of Pinot Nero you get both a rose wine and a sparkling rose wine.
The grapes are softly pressed, the maceration on skins for about 18&24 hours, get a wine with soft rich coppery-pink color with aromas typical of this grape variety. The alcoholic fermentation takes place in steel tanks at a temperature of about 18-20°C.
After that you pass in the autoclave where refinement and use of controlled temperature, we proceed with stabilization that allows you to consolidate the color and fragrances; the sparkling wine fermentation lasts about 30 days and then we proceed with the isobaric bottling sterile, while the sparkling lasts abut six months and takes place according to the charmat method Martinotti.
The organoleptic characteristics of rose wine show pale pink color that gives a feeling of lively, fruity freshness and expresses the delicate structure is characterized by a soft flavor, the perlage is fine and persistent.
The rose wine, normal and sparkling, well accompanies aperitifs, salami, fish, rice, white meats and young cheeses.
